Made from rice noodles and sweet basil, mixed with the meat of your choice (\u201cMoo\u201d or \u201cNua\u201d), the vendor will usually add cow\u2019s blood or pig\u2019s blood into the piping hot broth. This is what thickens the broth, adding richness and a dark brown color at the same time.
