Both of these types are called <strong>\u201cGui-tiaw rua\u201d<\/strong>.<\/p>\n<p style=\"text-align: justify;\">Originally it comes from <a href=\"https:\/\/www.bangkokbeyond.com\/blog\/ayutthaya\" target=\"_blank\">Ayutthaya<\/a> and is made from rice noodles and sweet basil, mixed with the meat of your choice (\u201cMoo\u201d &#8211; Pork or \u201cNua\u201d &#8211; Beef), the vendor will usually add cow\u2019s blood or pig\u2019s blood into the piping hot broth.<\/p>\n<p>This is what thickens the broth, adding richness and a dark brown color at the same time.
